Kalburabasti dessert takes its name from its method of preparation. Because this dessert is pressed onto the sieve during the shaping stage. It is an easy to make and great tasting traditional Turkish syrup-soaked dessert inherited by the Ottoman Empire.
How to Make Kalburabasti Dessert?
Kalbur means the sieve and basti means pressed; thus kalburabasti means pressed on the sieve. Here are the ingredients and instructions on how to make this addictive syrup-drenched authantic dessert step-by-step:
Ingredients: 250 gr. butter, 3 glass flour, 1 egg, 1 glass semolina, 2 tablespoons vegetable oil, 2 tablespoons yogurt, 1 pack baking powder, 1 glass crashed walnuts.
For the Syrup: 2.5 glass sugar, 2.5 glass water, 1/2 lemon juice.
Instructions:
1- First of all start with the syrup because we need it to be cold at the end of the process. To start with take the water and sugar in a pan and boil it. After boiled for 5 minutes add the lemon juice and remove from heat.
2- Secondly, prepare the dessert dough. For that add the soft butter to the flour and gently message it get a sand texture.
3- Thirdly, add the semolina, yogurt, egg, vegetable oil and the baking powder and knead to get a soft dough.
4- Now let the dough rest in the refrigerator for around 1 hour.
5- When the time is over, take the dough out of the refrigerator and start forming the cookies. For that, get wallnut-sized pieces out of the dough and make a ball shape with your hands.
6- Then press them gently and put them over the sieve and spread over the sieve a little.
7- Place some walnut filling in the middle of the dough and join the two ends gently.
8- You will see that the shape of the sieve transfers to the dough. Place them on the baking tray in such a way that the joined part remains at the bottom.
9- Bake them at 180 degrees in a pre-heated oven unti gold brown.
10- Take them out and wait for 5 minutes and pour the cold syrup when the desert is still hot.
11-Lastly rest them for 2 hours to absorb the syrup thoroughly.
12- Finally your kalburabasti dessert is ready to serve. Enjoy it!
