Orzo soup is one of the easiest soups to make. When compared to the vermicelli soup, the cooking time is a little bit longer. Here are the ingredients and step by step instructions for making orzo soup:

  • 1,5 cups of orzo pasta
  • 3 tomatoes
  • 1/2 bunch of parsley
  • 2 tablespoons of tomato paste
  • 2 tablespoons of butter
  • 2 liters of hot water
  • 1 tablespoons of salt

How to Make Orzo Soup

1- First of all wash and dry the tomatoes. Halve them and grate. You can also cut the tomatoes into very small pieces instead of grating as well.

2- Chop 1/2 bunch of parsley and put aside.

3- Put the 2 tablespoons of butter in a pot and melt over medium flame.

4- Grated tomatoes are added on melted butter. Close the potlid and cook over low flame for about 10 minutes until the tomatoes are soft.

5- Then add 2 tablespoons of tomato paste and fry and blend the tomato paste thoroghly.

6- Add 2,5 hot water and bring to a boil.

7- Whenever boils, add 1,5 cups of orzo pasta. At this point you can incease or decrease the amount of orzo pasta used depending on your choice of thickness.

8- Stir the soup every now and then to prevent sticking. Cook until the orzo pasta is soft.

9- Add chopped parsley and stir and remove from the stovetop.

10- Our orzo soup is ready to serve. It is freqently served with lemon. Enjoy!
