“Anchovy Bird” is an authentic Turkish snack recipe which belongs to the Northeast Blacksea Coast of Turkey. There are two different types of anchovy bird recipe. One is with the a real bird shape; the other one is with a meatball shape. In this recipe, we are going to make famous anchovy bird with meatball shape.
Ingredients
- 1 bunch of swiss chard
- 2 cups of corn flour
- 1 cup of boneless anchovy fillets (fresh or salted)
- 2 onions (chopped)
- 1 cup of chopped parsley
- 2 eggs
- 1/2 bunch of chopped mint
- 1/2 cup flour
- 1 tablespoon of salt
How to Make Turkish Anchovy Bird
1- First of all wash the swiss chard leaves under running water one of one.
2- Cut the leaves into 1/2 cm pieces.
3- Transfer the cut swisss chard leaves into a big bowl.
4- Then add the chopped onions and salt.
5- Message gently until the chard leaves are soft and juicy.
6- Then transfer them into a colander.
7- Pour a little water onto to get rid of excess salt.
8- Then press with your hand to get rid of excess water.
9- Transfer the sieved chard leaves into a big bowl.
10- Add corn flour, all purpse flour, chopped parsley, chopped mint, 1 egg and mix well.
11- Add 1 tablespoon of water if needed.
12- Add the cleaned boneless anchovy fillets which can be both fresh or salted.
13- Knead like a dough until soft enough to make meatballs.
14- Then get pieces in the size of an egg and form flat patties.
15- Align them in an oiled pan next to each other. Make sure the patties touch each other.
16- Beat the remaining egg in a small bowl.
17- Add 1 tablespoon of water and mix well.
18- Fry the patties in the pan over medium heat.
19- When the bottom part is cooked, close the lid and turn upside down.
20- Add vegetable oil to the pain.
21- Pour the egg mixture with a spoon starting from the edges.
22- When the both sides are golden brown, then your anchovy bird is ready to serve.
23- Close the lid and turn upside down to transfer the cooked anchovy bird to the lid.
24- Now you can transfer this great anchovy side dish from the lid to the serving plate.
25- You can serve 3-4 patties as a side dish next to main dish. Enjoy when hot.
