Pasta Salad Recipe: How to Make Cold Creamy Pasta Salad

In today’s recipe, we will show you how to make a cold pasta salad with mayonnaise and yoghurt dressing in mediterranean style. Here are the ingredients and step-by-step instructions for making creamy pasta salad at home.

Ingredients

  • 250 gr. bowtie pasta
  • 2 cups of yoghurt
  • 4 cucumbers
  • 4 carrots
  • 5 pickled gherkins
  • 3 tablespoons of mayonnaise
  • 3 cloves of garlic
  • 5 tablespoons of pickled purple cabbage
  • 1 tablepoon of salt
  • 1 liter of water

How to Make Pasta Salad

1- First of all, add 1 liter of water in a pot and bring it to a boil.

2- Add the pasta after the water boils and cook for 10 minutes.

3- When the pasta cooks, turn off the heat.

4- Drain with a colander and set aside to cool down.

5- We can prepare the garnish while the pasta cools down. We can start with peeling the carrots.

6- Remove the ends and grate all the carrots.

7- Put two tablepoons of vegetable oil in a wok or a non-stick pan. When the oil heatens, add the grated carrots and some salt. Cook until the color changes. Then transfer the cooked carrots in a suitable container to cool down.

8- Peel the cucumbers, remove the ends and grate them. After grating the cucumbers will be very juicy so it is better to squeeze the excess water. For that transfer the grated cucumbers in a collander and squeeze them in your hands to get rid of excess water. After that, set aside.

9- Transfer 5 tablespoons of pickled purple cabbage in a bowl and add 3 tablepoons of yoghurt and mix. While you mix, the color turns to pink from purple. (Click here for our pickled purple cabbage recipe in our website)

10- Remove the ends of pickled gherkins and dice them all.

11- 3 cloves of grated garlic and 3 tablespoons of mayonnaise are added to the yoghurt and mixed.

12- The diced pickled gherkins are added to the yoghurt, mayonnaise and garlic mixture and mixed.

13- This yoghurt mixture is then added to the cooked pasta and mixed.

14- Add half of this pasta and yoghurt mixture in a springform pan. Spread it evenly and press firmly with the backside of the spoon to flatten the surface.

15- Add 2/3 of the carrots and spread and press evenly to flatten the surface.

16- Add all of the cucumbers for the next layer. Spread evenly and press firmly with the back of the spoon to flatten.

17- Now you can add the remaining pasta-yoghurt mixture and spread and press evenly.

18- For the last layer, add the remaning 1/3 of carrots just to the side of the pan; leave the middle empty.

19- Add the pickled purple cabbage and yoghurt mixture to the middle of the pasta pie. Give a smooth circle shape with the spoon and press the flatten.

20- Refrigerate for 4 hours before serving.

21- Remove from the refrigerator after 4 hours, release and remove the spring.

22- Your cold and creamy Turkish pasta salad with yoghurt and mayonnaise is ready to serve.
