Pea Shoots Recipe: How to Cook Pea Shoots

Pea shoots are edible top leaves and vines of pea plant. They are very nutritious and rich in minerals and vitamins. Pea shoots can be consumed both raw (in salads) and cooked.

In Turkey the variety of pea seeds that are used in pea shoots are different from that of ordinary pea plant. It is very similar to pea seed, but a close relative with the latin name “piseum arvense”. There are many different recipes in differet regions.

Today we are gonna make a very delicious pea shoots meal with rice. This recipe belongs to nort east region of Turkey. It is a great vegetarian and vegan meal recipe packed with flavor. Here are the ingredients and step-by-step instructions for making pea shoots meal the Turkish way…

How to Make Pea Shoots Meal

Ingredients

  • 2 bunches of pea shoots
  • 1 onion
  • 3/4 tea glass of rice
  • 3 teaspoons of vegetable oil
  • 1 tablespoon of salt
  • 1/2 tea glass of water

How to Cook Pea Shoots: Step-By-Step Instructions

1- First of all, chop the pea shoots in 1 inch wide chunks.

2- Then transfer the chopped pea shoots in a deep bowl and add water on top. Gently wash the leaves with your hands. Since the pea shoots are located at the top of the vines, they are not very dirty like spinach and other green leafy vegetables that are close to the roots. This makes washing them easier.

3- Sieve the washed leaves, wash a few more times under running water and set aside.

4- Now you can start to wash the rice. For that transfer the 3/4 tea glass of rice in a colander and wash until all the starch is gone. Put he washed-rice aside too.

5- Chop 1 medium onion finely and set aside.

6- We can finally start cooking pea shoots now. For that put 3 tablespoons of vegetable oil in a pan or pot and heat it.

7- Then add the onions when the oil is hot. Fry the onions until they they are soft.

8- You can add the pea shoots when the onions become soft.

9- Add the rice, salt and water right after the pea shoots and mix gently.

10- Bring to a boil and then cover the lid.

11- Cook over low heat for around 20 minutes.

12- When the time is over, open the lid and stir. Our pea shoots meal is ready to serve.

13- Transfer to serving plates and eat when it is hot. Enjoy your meal 🙂
