Turkish Crunchy Borek: Make Cheese Filo Pastry

This recipe is about making traditional “kuru borek” which is a famous tray bake filo pastry. It is famous with its crunchy texture and amazing taste. It is possible to use any filling of your choice; such as ground beef, spinach, potatoes, leeks, etc.. As a matter of fact, this is true for all pastry recipes. In this recipe we will make a cheese filled Turkish borek.

How to Make Turkish Cheese Borek at Home?

In fact it can be a little time-consuming to make the dough. Because in this recipe it is important to make the filo dough from scratch. For this reason, it is better to make this recipe when you are available in terms of time. Here are the ingredients and step-by-step instructions on how to make crunchy borek pastry at home. Please enjoy!

Ingredients: 100 ml milk, 100 ml vegetable oil, 1 egg, 1 pack baking powder, 100 ml mineral water, 1 teaspoon salt, 3 cups of flour. 100 gr butter (for the top)

For Filling: 300 gr cheese, a bunch of parsley

Instructions:

1- Firstly take the egg in a mixing bowl and mix with vegetable oil.

2- Secondly add the milk and and mineral water and mix.

3- Thirdly, take flour, salt and baking powder in another bowl and mix them all thoroughly.

4- Now gradually add the flour mixture into the liquid mixture and mix well.

5- Knead all the ingredients until getting a soft dough.

6- Let the dough rest for at least 2 hours covered with a wet towel.

7- When the dough rests, you start preparing the filling. For that cut the cheese in small pieces.

8- Wash and clean the parsley and chop it all.

9- Add the chopped parsley into the cheese and mix.

10- Now take the rested dough and divide it into 20 equal parts.

11- Spread the first 10 dough pieces one by one around the size of tea plate.

12- Now add them on top of each other and roll out a filo pastry.

13- Place these 10 filos on the baking tray and place the fillig homogenously.

14- After that, spread the second 10 dough pieces one by one around the size of tea plate.

15- Then add them on top of each other and roll out a filo pastry.

16 – Put the second filo over the filling on the tray.

17- Slice the pastry as you wish and pour the melted butter on the top.

18- Lastly bake in a preheated oven at 170 degrees until gold brown on top.
